The Croquette Dough
The croquette dough was initially invented in 17th century France. It is a dough made with wheat flour, milk and butter, stuffed with meat and covered with breadcrumbs. The recipe spread around the world, and many variations were created. In Brazil, the croquette dough recipe was widely used with different stuffing and shaped in various formats. The most famous croquette variation found in Brazil is the Coxinha, a croquette filled with seasoned chicken and shaped like a chicken thigh.
Kibbeh
Originated in the Middle East, it is made of bulgur wheat and finely chopped meat, usually beef or lamb, and seasoned with herbs. It can be served raw, baked or fried. The ottoman empire spread the recipe globally and it became popular in many cultures. In Brazil, the most popular version is the fried one, usually consumed at parties together with coxinha and cheese balls.
Cod Cake
Originating in the south of Portugal in 1904, it arrived in Brazil in the 1970s due to Portuguese immigration after the Carnation Revolution. It became popular, especially among the middle class and wealthy people, since cod was expensive. The classic recipe includes salted cod, potatoes, wheat flour, and herbs.
Churros
There are many stories surrounding the origin of churros. However, we do know that it became really popular in Latin America. In Brazil, it arrived in 1963 in Sao Paulo and it was consumed without filling at first. In 1974 they became extremely popular and the first filled churros were filled with dulce de leche, which remains as the most favourite filling among Brazilians.

About Yummy Brazil
Since 2021
The idea of creating Yummy Brazil came from Roberto Murai’s passion for gastronomy. His love for cooking started when he was seven years old, as he began to learn how to cook foods that he would like to eat since his mother needed to work the entire day. Later in his life, he decided to pursue a degree in physical education due to the lack of financial support to pursue a gastronomy degree. However, he always knew that he would end up working as a cook one day.
When Roberto moved to Canada following his partner’s dream to do his Ph.D. in Biology, Roberto started to work in a local gym. However, to supplement the income, he decided to start working in a restaurant as a dishwasher. Over time, he had the opportunity to start learning how to work as a kitchen helper and later as a line cook, which made his passion for gastronomy return even more potent.
Last year, due to the pandemic, the restaurant where he used to work closed permanently. After a long period of unemployment, he started to think about continuing to work as a cook. Unfortunately, the idea of opening a restaurant in the midst of a pandemic would be extremely hard. Then, he came with the idea of focusing on a traditional and extremely popular Brazilian catering food popular named “Salgados,” usually served in various events, especially birthday parties. Since it is a food that many Brazilians like and Roberto could work from home and easily set up a delivery logistic, Roberto decided to pursue this idea.
That is how Yummy Brazil was born, with the desire to bring to Canadians a taste that resembles the good things Brazil has to offer to the world.
